French onion soup

INGREDIENTS

1 tablespoon of butter
1 medium red onion, thinly sliced
400g of white onions, thinly sliced
1 garlic clove (optional)
200ml of white wine
1 tablespoon of flour
1 ½ liters of broth (preferably beef)
2 tablespoons of chopped parsley
Bread Topping
12 slices of baguette
12 tablespoons of grated Gruyere cheese

Instructions

  1. Heat the butter in a pot and sauté the onions until they become caramelized. Add the garlic and flour.
  2. Mix well and then add the white wine, stirring constantly. Pour in the broth, add parsley (if desired), and season with salt and freshly ground black pepper.
  3. Let the soup come to a boil and thicken. Optionally, you can add a tablespoon of sherry for extra flavor.
  4. Prepare the bread topping by toasting the baguette slices on both sides.
  5. Sprinkle each slice with grated Gruyere cheese.
  6. Distribute the soup into bowls, place the slices of bread on top, and then place each bowl in an oven to melt the cheese.
  7. Serve hot.

TIPS

If preferred, replace the white onion with leeks and keep the red onion
